9/13/2026 SPECIAL RELEASE: 2025 Barrel Bay Soy Sauce

In late 2025, I did a seasonal release to complement the beautiful Serving Sets from Maren + Laura Ceramics. The foundation was my Original Soy Sauce infused with California Bay Leaves and a mix of Peppercorns, then aged in a BadMotivator charred oak barrel. Just for kicks, I made another batch, got busy and left it in the barrel for 10 months. This is the result of that moment of whimsy- the hard-to-describe but instantly knowable fragrance of Bay leaves, underpinned by the sharpness of peppercorns and surrounded in the umami excellence of soy sauce. This release makes the case to forgo using just salt in soups and stews, especially at the table. Dribble this instead of sprinkling salt- you get all the intensification of flavor that makes salt a dear friend, but with a depth that is hard to match. This one has been popular enough that a barrel-free variant will be a standard offering soon.
